Danielle I don’t know about you, but come September, I’m ready for everything pumpkin. When I spotted “Krusteaz” pumpkin spice bread mix at Costco, I knew I’d found a unicorn. This quick bread mix is my “new jam”. In this one box I’m able to whip up pumpkin waffles, pancakes, muffins, bread and cookies. Not only is this a quick and easy way to fix a festive breakfast or afterschool snack. I’m able to please even the pickiest of eaters, which is important to every parent. My personal favorite are the mini muffins, I can pop in my mouth in the carpool line. Pumpkin spice bread/muffins[M1] : 2/3 C. water ½ C. vegetable oil 2 eggs 1 pouch Quick Bread Mix. 1 packet pecans (included) HEAT oven as directed on the chart found on back of box. STIR together water, oil, egg, bread mix and pecans (optional) until well blended POUR into pan or muffin cups BAKE as directed or until tooth pick comes out clean COOL completely before frosting Cream cheese icing 1 C. softened cream cheese ½ stick softened butter 1 C. powdered sugar 1 teaspoon vanilla Using an electric mixer, mix on low speed until all ingredients are smooth Have fun adding chocolate chips to the batter or topping with cinnamon and sugar instead of icing. box also includes directions for waffles, pancakes and pumpkin chocolate cookies.
